Thermocouple

What is the best thermocouple to use that will be in a liquid application (food)? I have read in posts that the pt100 could leak out when heated??

Any thermocouple that is supported will give you control to about 1-2 degrees F. For more precise control, you need to use a Pt100 RTD (Resistance Temperature Device), which will give you control to within several tenths of a degree. I use a Pt100 sensor with its tip immersed ion the water circulating through the piping of my hot tub, with a spring clamp seal against 1/4" polyvinyl tubing around its body and I have no leakage at all.
