I need to control the temperature of a silicon blanket
which i use for bending sides of a classical guitar
could anyone recommend the controller and the thermocouple that needs to be inserted between the blanket and the wood

A K thermocouple will work, but I'm pretty sure most of us would recommend a PT100 RTD, so that you can get very fine control of the temp. The JLD612, a PT100 probe and an SSR for the heater, will take you where you want to go.
