Right now my 612 works great for sous vide, but I want it to use it also for a smoker - add a blower to the output so that when the temp drops it will turn the blower on getting more oxygen to the coals. The problem I see is right now to maintain temp it in the sous vide it cycles the heating elements on and off every second to maintain temp. I can't have that for the mechanical blower. Can anyone explain how I can change the settings so that it won't cycle on/off so much....maybe setting some parameters for less accuracy or something? Any help would be appreciated!

Try setting ot to 100 and increasing I to 500 -- that should slow the cycling down but still work. Note that you can turn the fan motor on and off once a second with no ill effects on the motor at all -- it doesn't care about the short cycle time.
