Nice Simple jld612 Setup

I'm setting up a kiln with a jld612 controller and its all put together with 40a ssr. I want to set the controller to stay at a particular temp, duh.
Is there a simple way to program this? I have my controller set up the same as the diagram below, except the wires go to the proper numbers, etc. Do I need to use the alarms to have the controller work properly (in a range of say 5 degrees high and 5 degress low of my set point), or can I just set one temp like 1000c? What is the best approach. Thanks for the help, so far so good.
Oh and I'm also wondering if I should place a fuse and where.
