Sous Vid Project Low Water Sensor

I would like to integrate a low water sensor such as this one http://www.ebay.com/itm/Vertical-Stainl ... 3a7f2d2436 into a Sous Vide setup, to shut the unit down What do you think would be the best way to accomplish it?

I would put it in series in the control signal line from the PID controller to the SSR. That switch has kind of an awkward arrangement for your use -- I would look for one that has a double-throw switch or one that is closed when the level is high and opens when the level is low....

The first one can be normally open or normally closed, so that's a good choice. The second doesn't say whether it is normally open or normally closed, so I can't tell if it's suitable or not. Go with the first one.
