which pid would be best

I am new to all this. I am trying to run 2 25 cfm fans 110 ac or 12 volt dc. would like to find a controler that will turn them on at set tempature.(210 to 340 depending on what I am cooking) that seems easy enough but I would like for it to moniror 3 or 4 other temps posably turning on an alarm at a set temps. any help will be appreciated.
